*here's a simple Chicken Malai Boti recipe for you*:

Ingredients:

  • 500 grams boneless chicken, cut into cubes
  • 1 cup yogurt
  • 2 tablespoons cream (malai)
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon white pepper powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • Salt to taste
  • 2 tablespoons lemon juice
  • 2 tablespoons oil
  • Skewers for grilling (wooden skewers soaked in water for 30 minutes or metal skewers)

Instructions:

  1. In a mixing bowl, combine yogurt, cream, ginger-garlic paste, white pepper, garam masala, cumin, coriander, cardamom, nutmeg, red chili powder, salt, lemon juice, and oil. Mix well to form a marinade.

  2. Add the chicken pieces to the marinade and coat them thoroughly. Cover the bowl and let the chicken marinate for at least 2-3 hours, or you can refrigerate it overnight for best results.

  3. Preheat your grill or oven to a high temperature.

  4. Thread the marinated chicken pieces onto the skewers.

  5. Place the skewers on the grill or in the oven and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.

  6. Serve hot with naan or roti, along with some mint chutney and fresh salad.
