MANGO CHEESE CAKE

INGREDIENTS
FOR CRUST
2 packets of digestive biscuits
Butter for binding
CHEESE CAKE LAYER
cream cheese 1 cup [i used homemade]
Boil 1 litre milk add vinegar or lemon juice 2 tbsp allow milk to curdle turn off stove .leave it for half hour strain and process it in blender ]
Castor sugar 3/4 cup
Gelatin 1 1/2 tbsp
Water 1/4 cup
2 chopped mangoes
MANGO PUREE TOPPING
2 mangoes cubed
Sugar 1/4 cup
Gelatin 1 tbsp
Water 1/4 cup
Half a lemon
INSTRUCTIONS
Use chopper to crush biscuits add butter accordingly so that it can bind and form crust. Put this in spring form pan and form a crust put it in fridge
Blend cream cheese ,sugar and mangoes
[Put gelatin in hot water and make mixture ]
Add the gelatin mixture gradually don't put it all in at once
Pour this mixture on top of the biscuit layer and cover with plastic wrap and put it in freezer for 3 hours maximum
For the mango puree blend mangoes,sugar
lemon juice.[ grab hot steaming water and mix gelatin in it ] pour the gelatin mixture in the mango puree and mix. Pour this on top of the cheescake and freeze again for 1 hour
This tates best when super duper chilled
